Our restaurant is drowning in food waste and need a better bin

#1
Running a busy restaurant in Jumeirah and honestly the amount of food waste we generate is starting to become a real headache, not just for our disposal costs but also for the smell that builds up between collections. We've been using these standard plastic bins but they just don't cut it anymore because they're too small and we constantly have overflowing waste sitting around in the kitchen, which is obviously not ideal from a hygiene perspective. I've been looking into heavier duty options that can handle our volume and actually contain the odours properly, and I'm considering investing in something like a waste bin 240l which seems like it would give us enough capacity to get through a full day's service without constantly having to run out and empty it. The metal construction looks like it would be much more durable and easier to clean properly than the plastic ones we've been using, plus having a proper lid that seals would really help with the smell issue that's been driving my kitchen staff crazy. What I'm not sure about is whether the wheels are decent quality on these larger bins because we have to move them through the back alley to the collection point, and the surface is pretty rough with all the truck traffic. Anyone else in the food business made the switch to a larger metal bin and found it solved their waste problems, or are there other things I should be considering like the frequency of collections and how it impacts the kitchen workflow?
